Cacao beans (Theobroma cacao) ripen in approximately 30 centimetres long pods, growing on a cocoa tree (Theobroma cacao), which was a holy tree to Mayas and Aztecs. Twenty to sixty seeds hide in a pod, called cacao beans, and are surrounded by white meat. The meat is removed and beans are left fermenting naturally so that they lose some of their bitterness.
