Asian veggie noodles with spicy dressing
Colorful veggie combination together with spicy dressing will enjoy every fan of Asian cousine.
Salad, Sauce & Dressing Thai 5 - 15 minutes
Ingredients:
Noodles
- ¼ red cabbage
- handful sprouted mungo beans
- 2 zucchini
- 8 carrots
- 4 red bell peppers
- sesame seeds
- 4 marinated mushrooms (tamari, oil and a few drops of water)
- fresh chilli (to taste)
- fresh coriander
Dressing
- 2 garlic cloves
- 2 cm ginger
- lime juice
- 200 g cashew
- 2 tablespoons light coconut nectar
- ume vinegar
- olive oil
- salt
- pepper
Instructions:
Peel zucchini and carrots. Use spiralizer to make a thin noodles from peeled zucchini and carrots. Cut the rest of the ingredients and combine with noodles. To make a dressing, add all the ingredients in Vitamix and mix until smooth. Sprinkle your creation with sesame seeds and fresh coriander.
