Raw Spring Rolls
You may be familiar with spring rolls from your favourite Vietnamese restaurant; we will prepare them in a raw version today. Rolls are great because you can change the filling depending on the content of your fridge. We have decorated the rolls with spring flowers to keep the name of this meal.
Main dish 5 - 15 minutes
Ingredients for rolls (4 portions = 16 rolls):
- 16 leaves of fresh spinach
- 1 cucumber
- 2 zucchinis
- 3 carrots
- a bunch of radishes
- ½ red onion
- 1 yellow pepper
Ingredients for dressing:
- 1 smaller red pepper
- 1 tablespoon of raw almond butter
- ½ - 1 tablespoon of miso paste
- lime juice from ¼ lime
- a pinch of chilli
Optional decoration:
blossoms of violet flower, daisy, or dead-nettle
Instructions:
For rolls preparation, use zucchini, cut thin slices preferably with a peeler. Put vegetables chopped to think noodles on the zucchini slice and roll carefully. Decorate with daisy blossoms.
