Raw Spring Rolls
You may know spring rolls from your favorite Vietnamese restaurant, today we will prepare them in a raw version. Rolls are great in that you can freely change the ingredients according -what you have in your fridge. We decorated the rolls with spring flowers to really live up to the name of this dish.
Main dish 5 - 15 minutes
Ingredients for rolls (4 servings = 16 rolls):
- 16 leaves of fresh spinach
- 1 cucumber
- 2 zucchini
- 3 carrots
- bundle of radishes
- 1/2 red onion
- 1 yellow bell pepper
Ingredients for dressing:
- 1 small red bell pepper
- 1 tablespoon of raw almond spread
- 1/2 - 1 teaspoon of miso paste
- lime juice from 1/4 lime
- pinch of chili
Optional decoration:
- Violet flowers, Daisies or Dead Nettle
Directions:
We will use zucchini to prepare the rolls, thin slices are best cut with a scraper. Place the vegetables cut into small strips on the zucchini slice and carefully wrap it up. Decorate it with daisies.
