Raw Carrot Burgers
It’s hard to resist delicious carrot burgers, moreover you risk “loosing” a half even before you carry them to the table. A carrot gives them a tasty mellow texture and a pastry is ready in a jiffy. They are ideal to accompany salad, hamburgers or root vegetable chips.
Main dish
Ingredients for 20 pcs. of raw carrot burgers:
- 1½ cups of grated and slightly squeezed carrot
- 1 cup of sunflower seeds
- ½ cup of linseeds
- 1-2 garlic cloves
- ½ teaspoon of pepper
- 1 teaspoon of salt
- 1 teaspoon of sweet pepper
- ¼ teaspoon of chilli
- ½ teaspoon of cumin
- ½ teaspoon of curcuma
- Sesame or hemp seeds to coat raw burgers
- Tahini sauce for dipping (tahini, salt, pepper, oil, lemon)
Instructions:
Firstly, mix dry ingredients for a paste – linseeds and sunflower seeds with spices. Add finely grated carrot and garlic, finally flavour if needed. Form a paste into smaller burgers about 1 cm wide and coat them in sesame seeds. If you want to extend their shelf life, dry until 42 °C for about 10 hours. However, burgers are delicious even fresh.
