Famous Desserts: Raw Pecan Baklava
The traditional Turkish cuisine recipe will be a pleasure for every sweet tooth. We have prepared baklava in a healthier version – without sugar and gluten.

Ingredients for filo dough:
- 4 big sweet red apples
- 2 tablespoons of lemon juice
- ½ cup of ground almonds
- 1 teaspoon of psyllium
Ingredients for filling:
- 1 cup of raw pecan nuts (roughly chopped) or ¾ of pecans and 1/3 of Brazil nuts
- 3 tablespoons of coconut nectar
- 3 tablespoons of apple puree (1 blended smaller apple)
- ½ teaspoon of cinnamon
- 1/8 teaspoon of ground ginger
- a pinch of clove
Instructions for filo dough making:
Process all the ingredients into dough in a good mixer and spread the mixture on a non-sticky dryer sheet of approximately 3-milimeter-width. Indicate squares using a knife. Dry until 40 °C for about 10 – 12 hours. Put the dryer sheet out after 8 hours and let it dry just on the grid.
Instructions for filling making:
Put apple, coconut nectar, and spices into the mixer and blend it well. Add roughly chopped pecan nuts into the mixture and mix it well.
Baklava filling:
Cut the sheets of dough into 4 squares of the same size. Always connect two and two sheets with coconut nectar. Then fill two double sheets with the nut filling and press it slightly. Cut the baklava into triangles and sprinkle them with the rest of the pecans.
