This salad originating in Middle East is refreshing thanks to mint and lemon juice. Try it in a raw form this time.

Raw Tabouleh

Ingredients for 4 – 6 people:

  • 1 smaller loaf of cauliflower
  • 4 tomatoes
  • 1 cucumber
  • a bunch of smooth parsley
  • a Ahandful of mint
  • cumin
  • 1 smaller red onion
  • Himalayan salt, pepper
  • Extra-virgin oil
  • lemon juice from a ½ lemon

Instructions:

For a salad basis, you can use cauliflower chopped in a mixer (into the size of bulgur grains). Get rid of tomato cores and chop tomatoes, cucumber and red onion into tiny pieces. Mix everything, add chopped parsley and mint, season with cumin, salt, pepper and spray it with lemon juice and olive oil.
