Bee bread, also known as ambrosi or perga, is product made by bees, which serves as an essential component of food for their offspring. There is a complex process that begins at the plant itself, where hardworking bee is collecting the pollen, which is the basic raw material for the bee bread. Pollen is a source of vegetable protein complex also contains simple sugars, small amounts of fat, many vitamins, minerals and especially the active enzymes.
What is the difference with the pollen itself?
The pollen grain in its original state is very strong and for the body unusable. But this changes when fermentation occurs. Everything happens in sealed honeycombs with small amount of honey. It is thus predominantly a mixture of two major compounds in an approximate ratio of 25% honey and 75% of the pollen. Bees are temping the pollen grain together with enzymes, probiotic bacterias and yeasts, which later assist disruption of pollen grain. Stuffed grains in honeycombs are sealed with honey and wax, which is displaced all the air and due to the heat in the hive slow fermentation begins. This process is literally the alchemical reaction and results are easily absorbable nutrients. It is interesting that this fermented pollen is its properties stable for several years.
With this processing is, compared with bee pollen, usability substances of bee bread 4x larger. And there is one more advantage compared to pollen or honey, and that in most cases does not cause allergic reactions.
