Buckwheat Salad with Herb Pesto
If you feel like eating something lighter also now in the autumn, try a buckwheat salad. This cereal is great in this season because it warms up your body.
Main dish, Salad Cashews
Ingredients for 2 portions:
- 1 cup of buckwheat (soaked overnight)
- 1 spring onion
- 4 sticks of ribbed celery
- 2 handfuls of wild rocket
- 1 apple
- A wedge of lemon for serving
Ingredients for a parsley pesto:
- 3 handfuls of flat-leaf parsley
- 1 handful of mint leaves
- 2 tablespoons of lemon juice
- 4 tablespoons of olive oil
- 1 tablespoon of coconut nectar
- 1 handful of cashew nuts
- ¼ teaspoon of Himalayan salt
- Fresh grind pepper
Instructions:
Cut spring onion, ribbed celery and apple into small pieces and mix with buckwheat. Flavour with lemon, salt. Put the pesto ingredients into a blender and mix until obtaining a smooth paste.
