Walnuts, hemp seeds and cucumber spread
Fresh, light and creamy at the same time. This spread is ideal on bread or as a dip for raw vegetables when you're tired of legume spreads and want a nutritious snack at the same time. The inspiration for this recipe was tarator - a Bulgarian cold soup that is pleasantly refreshing on warm days. However, we enjoy it in the form of a spread and it tastes even better.
Spread 5 - 15 minutes
Ingredients:
- ⅓ cucumber (125 g)
- 100 g wallnuts soaked overnight
- 25 g hemp seeds
- 1 teaspoon apple cider vinegar or lemon juice
- 2 tablespoon olive oil
- 1 clove garlic
- dill
- Himalayan salt
Instructions:
Put all the ingredients except the dill into a blender and blend until smooth. Chop the dill and add to the spread. Season to taste and leave to cool well in the fridge before serving.
